March: Onion, Cheese and a little something to cure any toothache they cause
Onion Tart
1/2 lb onions; 2oz margarine; 2oz ground rice; 2 eggs; salt; pepper; half pint milk; 1/2 lb short crust
Method – Line an enamel plate with the pastry. Chop the onions and cook in the margarine, without browning for 10-15 minutes. Beat the eggs, stir in the ground rice and mix till smooth. Add the ilk, stir this into the onions, cook until the mixture thickens and then for 2 or 3 minutes. Season and spread on pastry. Cook in a moderately hot oven for 3/4 of an hour.

Cheese Scones
(For 24 scones)
1/2 lb plain flour, 1 level teaspoonful bi-carb of soda, 1 level teaspoonful cream of tartar, 1/2 teaspoonful of salt, 1 oz fat, 1 gill of milk, 2 tablespoonfuls of cheese.
Sift together flour, salt, bi-carbonate soda, cream of tartar, rub in fat, add cheese and milk to make a soft dough. Roll on floured board and cut into rounds. Mrs H Barker
Cure for Toothache
Take two gills of water, boil down to a pint, skim the fat off and make into two pills. Take one after going to sleep at night, and another before you wake up in the morning. If this does not cure, come downstairs and put your foot through the window and the pain’s (pane’s) gone. (anon)
