A cheery, warming dish for this snowy weather!

Make a big pan of it … it will keep you going for days.
To make a more substantial meal, add some cooked veg
(carrots/sweet potatoes/swede etc) at the end, or some
finely chopped kale or spinach at stage 4.
There’s plenty of lovely fresh kale growing in the
Police Station beds at the moment ….Help yourself!

Ingredients:
1 tbs rapeseed oil
1 onion, diced
2 cloves garlic, chopped
1 tsp chili powder
2 tsp turmeric
2 tsp curry powder
2 tsp cumin powder
250 gm red lentils, rinsed
water
salt

Directions:
1. Heat the oil in a large pan.
2. Cook onion and garlic, stirring frequently until the onion has softened and is turning clear.
3. Add spices and cook, stirring continuously, for 2 minutes. Adapt amount of spice to suit your taste.
4. Tip in the lentils and cover with water. Bring the mixture to the boil, then reduce the heat to a gentle simmer. Cover the pan with a lid whilst simmering, Keep checking and add more water as needed.
5. Cook until the lentils are tender, about 30 minutes.
6. Add salt to taste
7. Serve on its own or with rice or flatbreads
