golden vegetable couscous

Ingredients

2 tablespoons olive oil
1 medium onion chopped
1 sweet yellow pepper chopped
1 carrot chopped into cubes
1 small sweet potato cubed
4 cloves garlic minced
6 cherry plum tomatoes halved
4 fresh apricots quartered
Handful of white grapes (whole)
Half salted lemon cubed
1 cup vegetable stock
1/4 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon ground cumin
2 sprigs fresh rosemary chopped
2 sprigs of fennel chopped
Small bunch fresh marjoram chopped
1/4 teaspoon cayenne pepper optional
1 cup /175g couscous

Instructions
In a medium-size frying pan heat the oil over medium heat.
Add onion, yellow pepper sweet potato, and carrot sauté 10 minutes or until all the vegetables are your desired tenderness
Add the garlic, sauté another minute.
Remove from heat and keep warm.
In a medium-size saucepan, bring the stock to a boil. Mix in the apricots tomatoes and lemon, cook for two minutes, stir in the couscous, cover and remove from heat. Let stand 5 minutes, until liquid is absorbed. Add the vegetable mixture and fluff with a fork.
