Incredible Beets and Beans

Kelly has kindly agreed to do a monthly cooking blog for us. Her first is about the wonderful pay as you feel Christmas Day feast.

On Christmas Day last year, myself and an amazing bunch of volunteers

set about making a feast that could feed the masses with Gig at the wonderful Golden Lion on Fielden Square.

I’d had a very busy week in the run up to Christmas collecting food from local businesses and distributing the posters around the valley. I wanted to make sure the word would spread, as I knew it was going to be a reet good knees up. However, I was still worried about whether we’d have enough food and if many people would even show up?? Ha! It was quite literally a roaring success.

The Lion was full to the brim and buzzing. There were carols being sung, crackers being cracked, children and dogs running around like headless chickens, drinks flowing, people laughing and more! lot’s of fine food being ate by the local community. It couldn’t of gone any better.

One of my favourite dishes I made for the Beets & Beans banquet was a dish I made with 2 ingredients I don’t particularly use that often, sweet potato and peanut butter. The food that we were given was donated a day before the dinner was prepared. So some quick thinking was in order to come up with a fun and festive menu.
As I mentioned earlier I’m not sweet potato and peanut butters biggest fan, but together they make a mouth-watering gratin that is to die for! The sweet, the savoury and creaminess of the peanut butter, the spice from the chilli and the sour from the lime makes this dish a must try if you like tantalizing your taste buds.
I followed Hugh Fearnley-Whittenstall’s recipe from River Cottage Veg with some added tweaks….I always add more garlic and chilli to any recipe, it’s got to be done. If you’d like to try this amazing dish follow the link below for a recipe run down.

With the money made from the dinner it’ll be used to help fund future free community events. So watch this space!
