Weed Fritters Fab Food show

What you need

500g (or a bagful!) of mixed leaves; Dandelions, sorrel, wild garlic, bittercress, fennel…
2 fresh-laid eggs
200g plain flour (could do half plain flour, half gram flour)
300ml Milk (or soya milk)
butter for frying (or olive oil)

What to do…

Heat the oil or butter in a heavy-bottomed frying pan
Add the leaves and heat gently till just wilted
Tip into a bowl
Make the batter by sifting the flour into a large bowl
Add the eggs, beaten, and stir in, slowly adding the milk until it has the consistency of thick cream.
Add the wilted leaves, season with salt and pepper

Add a little more butter to the pan and dollop spoonfuls of the mixture into the pan. fry for about three mins or until the underneath is golden-brown
Turn the fritters over and cook for a further two minutes until golden-brown.
Place onto a platter, sprinkle with coarse sea salt and shavings of parmesan cheese and serve hot…..
