Vegetarian 'Wisley Crab Cake' ...yummy!!

Wisley Crab…. my new favourite apple!

We found this little tree in the orchard of David Roeder, and bought a small one for our collection…

The blossoms were beautiful…dark magenta with a lovely perfume…a promise of what was to come…

…A beautiful large apple…dark crimson in colour and a superb shape…much larger than common crab apples…but what would it taste like?

quite sharp and sour, but just look at the wonderful colour!!….

I decided to make a cake with the one apple that the tree produced this year…

What you will need…

two Wisley Crab apples
sugar to taste…

for the sponge
4oz self-raising flour
4oz caster sugar
4oz soft butter/margarine
2 local free-range eggs

What to do…

Quarter and core one apple and cut into thin slices;
peel, core and cut the other apple into small pieces and cook in a small saucepan till cooked to a pulp…add a little water if necessary…

The sponge bit is easy…put all the ingredients into a bowl and mix together with an electric whisk or beat together with a wooden spoon…

Take an 8” sandwich tin and arrange the apple slices in a swirly pattern on the base…then gently spread the apple pulp on top of the slices… add the sponge mixture on top of the apple, smoothing off the top so it is level…

Bake in a medium oven… 170c or Gas mark 3/4 and bake for about 20/25 minutes until golden brown and springy on top.

Loosen the edges and turn the tin upside down onto a pretty plate and leave for half an hour or so… remove the tin and the cake should look like this…

lovely served warm with local double cream or homemade vanilla ice-cream!!!. I was asked if I’d used peaches…gives you an idea of the flavour…..Mmmmm….
